Opened as an extension of the hotel’s renowned dining program, Brick Vault has quickly established itself as a must-visit destination, earning recognition from Texas Monthly as one of the state’s notable new barbecue joints and a 96% recommendation rate on Facebook.
Texas Monthly praised the restaurant, stating, ‘I enjoyed the peppery ribs, which were long and thin but still plenty juicy. Tender turkey breast was well smoked, but the brisket is the prize.’ Visitors consistently highlight the quality, with one guest noting, ‘The microbrew was outstanding, the service was excellent, and the barbecue was better than average. Brick Vault Brewery produces an impressive lineup of handcrafted beers using traditional brewing methods combined with creative experimentation inspired by West Texas. The brewery offers a rotating selection of styles including Pilsners, Blondes, Porters, IPAs, Hefeweizens, Kettle Sours, and Ambers. Named for the founder of Marathon, TX, the Pecan Porter is brewed with Texas pecans and rich roasted malts, featuring a pleasant coffee aroma and full chocolate flavor.
Texas Barbecue Excellence
The barbecue program upholds the traditions of Texas smoked meat while incorporating the restaurant’s refined sensibility. Texas Monthly noted, ‘Our pork ribs were amazingly tender, with good peppery seasoning, and the pulled pork had a perfect touch of sweetness.’ Smoked brisket is the centerpiece, prime-grade beef smoked low and slow over post oak until it achieves the perfect balance of bark and tenderness.
